To remove a Field from the Search window, click on the x (close) icon in the upper right hand corner of the Field.  This will not only remove the Field from the Search, but also repopulate the Contact List with those not matching the criteria of that Field.

NOTE: You can always cancel your search and get your entire database back into the Contact List by selecting the Show All button.

This expands the search as shown in the example below.  We started with a search based on 1)  first names that start with the letter "J"  2)  Member Of Group = "Retail"  3) and State = California:

We then removed the first name criteria and went from 5 results to 19:
