Right click and select Manual Field(s) to manually type in the values of the Fields which will automatically update the records  with the value you enter.

For example, if all of the emails you are importing contain contacts who live in the United States, you can make "Country1" a Manual Field and have that field be populated with "United States" as shown in the picture to the right.

You can do this with as many Fields as you wish.
